Black rice, also called 'forbidden rice' or 'emperor's rice,' is gaining popularity for its high antioxidant content and superior nutritional value. 'Forbidden rice' earned its name because it was once reserved for the upper class.
Black rice is a medium-grain, non-glutinous heirloom rice with a deep purple hue and a nutty, slightly sweet flavour. This whole-grain rice is rich in anthocyanins, which are antioxidant pigments that give the rice its unusual colour. Relative to other rice varieties, forbidden rice is high in protein and iron.
How to use
Step 1
Rinse the black rice in cold water.
Step 2
Combine 1 cup of black rice with 2 cups of water in a saucepan.
Step 3
Bring to a boil, then reduce heat to low, cover, and simmer for about 30-35 minutes or until the rice is tender and the water is absorbed.
Step 4
Let it rest for a few minutes before fluffing it with a fork.
